Easy vegetable pasta bake


Ingredients: 
any vegetables you fancy but here's what I used tonight;

2 cups of pasta 
1 bell red pepper (chopped)
1 medium onions (chopped) 
3 cloves garlic (minced)
1/2 cup green beans 
1/2 cup broccoli 
3 medium mushroom 
a pinch of herbs 
a pink of salt  
1/2 tsp ground black pepper 
400g tin of plum tomatoes 
2 tbsp Vegetable oil
2 tbsp olive oil 

Method: 

1.)Boil 2 cups of pasta drain and set aside. 

2.) Pre-heat oven to Gas Mark 6. 

3.) Heat a saucepan, pour a vegetable oil to fry the garlic & onions for 1 minute then add the chopped vegetables and cooked for 5 minutes and sprinkle the olive oil. Then, stir in the tin of tomato and wait for 2 minutes then add the herbs, ground black pepper, salt. 

4.) Place pasta in a oven baking dish then pour over the vegetable-tomato sauce into it and stir a bit then bake for 15-20 minutes. 

5.)Serve as it is or with the cheese of your choice or garlic bread and any side dish you fancy. Enjoy xx

Finest Sunday Roast Lamb

When it comes to roasting lamb, no one beats my husband. It becomes my favourite dish of all time. Last night, he made us his specialty again and oh never in a million times I'll get enough with it. Finest roast lamb I ever tasted, served with his finest leek cheese, baked-roast potato, finest gravy and lovely veggies. We don't need to go to restaurant as we are capable of cooking an even more delish. Well my husband definitely can and that's a fact! Here's our dinner last night...

Fish Meal

Lately, i have decided to go for a seafood diet. Part of the reason is the lent season and thought i should give it a try. Other reason is to become leaner and healthier. Surely, its going to be a challenge but I'm proud to say that I'm on my 2nd week. Hooray! Hang-on a minute! Have I just cheered myself too early? Oh well, never mind! Its really typical of me to believed that going seafood would reduce this annoying blob hanging off my belly, I don't think so especially when you munch it in with a huge bowl of rice. That is why I'm also reducing my carbs intake so have switched to brown rice too. Well, I just have to do something with my unwanted meat purely because I can't seem to fit all my jeans. It is definitely a struggle, I tell you :( - so I really hope that in a months time I can actually see a slight weight drop. Finger cross for that as I'm still bad on snacking in between meals. Anyway, when I say I'm going for a seafood diet, its literally on the day I mentioned it which was exactly a week ago. And look at my first ever meal on that day...

Shallow-fry tilapia served with sautéed string beans and of course dip in a soy with cut tomatoes. And oh, I had a steamed potato with it but forgot to include it in the picture :) x
